As part of our mandate, we are committed to offering single origins that exemplify the best of what producing countries have to offer; for Ethiopia – the birthplace of coffee – this rings doubly true. Aroresa is a coffee that has seen a great deal of success in the Australian market but, until now, it hasn’t been a part of our offerings. This year it was an absolute standout on our cupping table so we decided it was time to bring it home to Dimattina! Aroresa is a privately owned washing station in Ethiopia’s Sidamo region. The exceptionally high elevation (and therefore colder temperatures) slows the cherry’s natural maturation period and, in turn, stimulates a sweetness and clarity in the cup that other producers can only dream of. The station’s owner Wochesa Achiso works collaboratively with Testi coffee and participates in their Premium Cherry Selection initiative. This essentially provides incentives to local producers for bringing only the ripest cherries to be processed. This coffee is intensely floral with notes of jasmine and honeysuckle. A soft lemon acidity comes through as the coffee cools and gives a distinct impression of lemon curd. Highly recommended as a black filter-style coffee.
