We’ve made something warm, spiced and very nice for winter coffee season. Inspired by the clever drink creators at Little Joy Coffee, our Cardamom Bun Syrup brings together brown butter, cinnamon and cardamom for that fresh-from-the-bakery feeling in your morning coffee.
What you need:
- 1 ½ cups brown sugar
- 1 cup warm water
- 113g unsalted butter
- 1 tbsp ground cardamom
- ½ tsp ground cinnamon
- Pinch of salt
Instructions:
- Place the butter in a saucepan over medium-high heat. Cook, stirring often, until it turns amber in colour and develops a warm, nutty aroma. Some brown flecks are okay, but if they’re turning black, you’ve gone too far.
- Remove the pan from the heat and stir through the brown sugar, cardamom, cinnamon and salt.
- Return the pan to medium heat, then slowly add the warm water while stirring. Bring the mixture to a gentle simmer and allow it to reduce for around 15 minutes.
- Transfer the mixture to the fridge and chill for a few hours, or overnight, until the butter separates and sets on top.
- Remove the solid butter layer and set it aside. Strain the syrup into a clean jar or squeeze bottle.
- The finished syrup will still carry that rich, buttery flavour, even once the butter has been removed.
- The leftover butter can be softened at room temperature and mixed until smooth. Spread it over toast, pancakes or waffles for a cosy winter breakfast situation.
Cardamom Bun Latte:
- 20g of Cardamom Bun syrup
- Double shot espresso
- Steamed milk of choice
