That approach suits Finca El Cipres well. Run by Isacio Javier Albir Vilchez, this 20-hectare farm sits in the Dipilto region of Nueva Segovia, at around 1,400 metres above sea level. The focus here is on doing the basics well and producing coffee that’s steady and dependable.

Picked ripe and fermented for 36 hours, this lot is smooth and approachable. Think jammy orange sweetness, with a hint of cacao. Lower acidity and a rounded profile make it easy drinking across brewing methods and suitable with milk.
