Coffee with care, from a co-op that does more than just coffee

This washed Bourbon lot from Kabirizi is produced by COOPAC, a cooperative on the shores of Lake Kivu known for its commitment to both quality and community. The result is a bright, fruit-forward cup with notes of nectarine, mango and toffee, showcasing the clarity and sweetness Rwanda is loved for.

COOPAC was founded in 2001 with just 110 farmers and a vision to build something better. Today, it supports over 8,000 members across Rwanda’s Western Province, sharing resources, distributing livestock, and investing in infrastructure like schools, roads and clinics. Environmental sustainability is just as important. Shade trees are planted to prevent erosion, and coffee pulp is composted to enrich the soil rather than pollute the lake.

This lot was processed at Kabirizi washing station, where the team uses a traditional Rwandan washed method that includes a distinctive soaking step, similar to Kenya. After depulping and fermentation, the coffee is soaked for a further 24 hours before being dried slowly on raised beds. This extra step adds clarity and structure, allowing the fruit character to shine.

It’s a versatile cup that works beautifully as both espresso and filter. Juicy, sweet, and a great expression of Bourbon from the mountains of Western Rwanda.
