There’s something undeniably special about a natural Ethiopian coffee, and this year’s Werka crop from the Aash washing station in West Arsi is no exception. Known for their vivid flavours, natural Ethiopians often serve as the gateway to specialty coffee for many industry professionals. But this Werka lot, made from the Wolisho variety, goes a step further, highlighting the unique qualities within Ethiopia’s rich coffee heritage.
Most Ethiopian coffees are a blend of local and forest-grown varieties, often grouped under the term 'heirloom.' This broad classification captures the beautiful complexity of Ethiopia’s diverse coffee landscape but can make it challenging to pinpoint distinct traits linked to specific farms or varieties. The team behind the Werka crop took an extra step to identify the Wolisho variety, demonstrating their dedication to quality and traceability. This effort supports research by institutions like the Jimma Agricultural Research Centre, enhancing understanding of yield, disease resistance, and flavour profiles—contributing to the future of Ethiopian coffee.
This lot is one of the most spectacular examples of an Ethiopian natural we’ve had the pleasure to offer at Dimattina; expect notes of juicy mandarin, creaming soda, and a light strawberry sweetness. Ideal for those who appreciate the complexity of black coffee but versatile enough to shine in any brew method.
